After our crazy busy weekend, the last thing I wanted to do when I woke up this morning was go to the grocery.. so I didn’t. I sat at the kitchen table and lettered the addresses on Rhett’s birthday invites. I think they turned out really pretty & I didn’t have any mess-ups–score! So now that I’ve finished those & done my housework, I’m going to relax a little bit and save the grocery trip for once Rhett wakes from his nap.
Here’s what we have planned for the week:
Steaks w/ Sautéed Mushrooms & Baked Potatoes
Thai turkey meatballs (new!)
Avocado, Mozzarella Bruschetta Chicken
Spicy Peanut Noodles
Bleu Cheese Burgers & Roasted Cauliflower
The only recipe new to me is one my friend passed on, so I’m excited to try that! And the other two recipes I’ve linked to I have made before, but have yet to mention here on one of these weekly posts. Both are amazingly delicious & for sure crowd-pleasers! Steaks & burgers are also on the menu, but I figured you probably wouldn’t need recipes for those haha.
I’m off to go make myself an iced coffee & sit out on the patio until you-know-who wakes. May your coffee be strong and Monday short!
Boy did we have an eventful weekend! We saw my nephew in a school lip-sync battle on Friday, we went to our single A baseball team’s game on Saturday and on Sunday we ran a bunch of errands to get stuff for hanging Rhett’s new swing, mulching the yard and grocery shopping. We’re planning our trip to IKEA for next weekend to finish up pergola decorations, then I’ll let you see her in all her glory! I can’t wait. This week Danny chose our menu so none are new to us, but they may be for you!

My favorite is the turkey burger; I searched everywhere for the recipe I used to always use, but couldn’t find it! The recipe I linked is the closest one I could find, so I’ll follow the directions on the recipe, but also top it with a sliced green apple under the cheese! So good. Also, can you tell we aren’t fish lovers? I want to start including it on our menus, but my dilemma is that I really have to be in the mood for it & Danny doesn’t love it unless it’s deep fried in all it’s deliciousness. Anyway, I thought I’d include a recipe for fish today in case you’re looking for one to try.. maybe if I cooked this salmon teriyaki recipe, he’d like it?!

After another eventful weekend with my parents in town from Nashville for my mom’s birthday, we woke up with full hearts and a list of errands. We woke up, cuddled in bed for a bit and then came down to get the day started. Which always includes letting the dog out and feeding her breakfast, making my first cup of coffee, doing any dishes & starting a load of laundry.. all with Rhett on my hip because he’s fussy about being alone on the floor playing when he first gets up. On the list of errands for today includes a trip to the grocery to pick up the stuff for this week’s menu. Ready for it?

Last week I tried to make zucchini bread and got everything out to make it, then realized I forgot the flour at the grocery store. Well I guess I didn’t forget, but I chose not to buy it since I was shopping with Rhett in the stroller and I didn’t want to get flour all over the basket. But I’d forgotten that I made that decision when I was getting everything out. So long story short, I’ll also be making a batch of zucchini bread using the recipe below.
See the date on that?! 1991. The thing is almost as old as me! But I love knowing one of my grandmas wrote this and used it herself way back then.. which is why I started a collection of hand-written recipes myself to pass on one day. You should too! Oh, and write it in cursive so it’ll look REALLY old! lol.
